From Instagram Hustle to Metro Manila Favourite

The Manila Baker began as a labour of love in 2018 — when Chad and Alisxandre Ayson started baking from home and selling through Instagram, guided by one uncompromising standard: we never skimp on the good stuff.

Before the Burnt Basque Cheesecake became a Philippine food trend, The Manila Baker was already perfecting its own version — a caramelised, creamy, Spanish-inspired cheesecake made with real cream cheese, premium eggs, and nothing artificial. Word spread, orders grew, and the brand built a loyal following one slice at a time.

In July 2023, The Manila Baker expanded to its first mall stalls across Metro Manila — bringing fresh-baked goods to Trinoma, Rob Magnolia, Podium, Shangri-La, Glorietta 2, and GH Mall. Then in February 2024, the brand opened its boldest chapter yet: Manila Baker Brew and Bistro at Capitol Commons, Pasig — a full all-day dining destination where pastry meets bistro cuisine.
