How It Began

A Passion Project That Refused to Stay Small

In 2018, Chad and Alisxandre Ayson weren't running a bakery — they were answering a calling. What started as baking for family and friends quickly turned into something bigger when their creations began earning rave responses. They started selling through Instagram, posting freshly baked goods and letting the work speak for itself. One slice at a time, a loyal following grew.

The couple had a clear philosophy from the beginning: never skimp on the good stuff. Every ingredient was chosen with intention — real cream cheese, premium flour, quality butter, natural flavourings. This unwillingness to compromise is what set The Manila Baker apart in an era when shortcuts were common and convenience often trumped craft.

When the Burnt Basque Cheesecake began gaining national attention in the Philippines, The Manila Baker was already ahead of the curve — one of the country's earliest proponents of this Spanish-inspired dessert, made in its own signature way. The dense, caramelised top and creamy, barely-set centre that they perfected became the product that would define the brand for years to come.

2018

The Beginning

Chad and Alisxandre Ayson begin baking from home and selling premium baked goods through Instagram. The Manila Baker is born — built on the promise: we never skimp on the good stuff.

2019

Cheesecake Pioneers

The Manila Baker becomes one of the Philippines' first brands to champion the Burnt Basque Cheesecake, building a dedicated following long before the dessert became a national trend.

2020–22

Growing Through Instagram

Despite the pandemic years, The Manila Baker's Instagram-first model proves resilient — online orders keep the brand thriving and its community growing steadily.

Jul 2023

First Mall Stalls Open

The Manila Baker expands beyond digital with its first physical mall stalls at Trinoma, Rob Magnolia, Podium, Shangri-La, Glorietta 2, and GH Mall — bringing fresh bakes to thousands of Metro Manila customers.

Feb 2024

Manila Baker Brew & Bistro Opens

The brand's most ambitious project launches at Capitol Commons, Pasig City — a full all-day dining destination combining artisan baked goods with a brew bar and bistro menu. A new chapter begins.
